How Could It Be Gluten Free? Elisa Technologies tested all of our sauces for gluten. ALL of our sauces, including the Yaki, came back at less than 5 ppm (5 parts per million which is the best current testing available). We were surprised too. We asked "How could the Bone Suckin' Yaki be gluten free?" We had it tested three more times to make sure. Our Yaki does contain wheat, BUT it is such a small percentage in the soy sauce, it registers less than 5 parts per million. The current FDA codex equates less than 200 ppm, is considered safe for Celiacs, therefore the Yaki is WELL below the Current Codes. The FDA is in the process of making a rule to change that to 20 micrograms of gluten per gram of food to call something gluten free. So our Yaki is still below 5 ppm as well to meet that new standard.
